Fryer Recipes: Mushrooms and Plantains

I love food made in a deep fryer. Mine is small, just enough for a few servings for guests who have already eaten something on the way to the house and lose one or two in their party to a tailgate. Some people have mammoth fryers that are on full-tilt 24/7 and sustain families of eight or more day in and day out. COUNTRY FRIED MUSHROOMS

Ingredients

1 pound mushrooms (morel, white button…)

2 eggs

3/4 cup milk

1 (4 oz.) packet saltine crackers, finely crushed

Salt and pepper

Directions

Heat oil in deep fryer to 360 degrees F.

Prepare mushrooms by rinsing and cleaning them with paper towels or a soft brush. Slice them into smaller bite-size pieces if they are too large.

In a medium bowl, beat in the two eggs and pour in the milk. Stir until well combined. In a second bowl, add in breadcrumbs.

Put each mushroom into the egg bowl first, and then transfer to the breadcrumb bowl. Be sure each is coated well.

Add to deep fryer and fry for 1 - 2 minutes or until you see them turn golden brown. Turn them over and fry on the other side for 1 minute. Remove from fryer and place on paper towels. Add salt and pepper. 4 servin

GEORGIA DEEP FRIED PLANTAINS

Ingredients

3 cups water

3 green plantains, peeled

3 teaspoons salt

3 cloves garlic, chopped

Directions

Heat oil in deep fryer to 375 degrees F.

Mix together plantains, garlic, 2 3/4 teaspoon salt and water in a large bowl. Let plantains sit for 12 - 15 minutes before removing from the water and drying off. Save the water for later.

Drop plantains in deep fryer and fry for about 6 - 7 minutes. Remove from fryer and place on paper towels to drain excess oil. Keep the fryer on.

Once plantains have cooled to the point you can pick them up and handle, flatten them out to about 1/4 inch thick. You can use your palm or even a hardback book if you prefer.

Place the plantains back into the deep fryer and fry for another 2 - 3 minutes or until they become golden brown and crispy. Remove from oil and place on paper towels to drain off the excess oil again. Season with salt. 6 servings.
